On the Nautilus Explorer, we pride ourselves on offering fresh and varied and fine dining during your diving liveaboard vacation. We serve a mix of Mexican and western style cuisine, lots of fruit, vegetables, imaginative salads with homemade dressings and a bottomless baskets of freshly baked snacks. Our bread, buns and desserts are baked onboard. And our 2 attentive hostesses will be watching out for your every need.


Breakfast on the Nautilus Explorer: Your typical day starts with coffee on at 0630 and a "pre-dive snack" continental breakfast at 0715 with fresh baked goods, a fruit plate, homemade granola, a choice of cereal, yogurt, toast, fresh orange or mango juice and porridge (note from Captain Mike - I think that's what they call oatmeal in the United States!).

Breakfast is usually served after the first dive and will be a mix of buffet, cooked-to-order, Mexican-style, and the occasional brunch. While menus are always subject to change and refinement, our "hotel breakfast" presently includes:

  • Eggs to order (fried, scrambled or poached)
  • Omelets (choices: tomatoes, onions, pepperoni, peppers, mushrooms, cheese)
  • Quiche
  • Breakfast Burritos
  • Sausage
  • Hashbrowns
  • Pancakes
  • French toast
  • Fruit Platter
  • Cereal (Special K, Raisin Bran, Corn Flakes or homemade granola)
  • Fresh baked bread
  • Porridge
  • Yogurt


Lunch on the Nautilus Explorer Lunch will either be "deli style" with hot fresh white, brown and rye bread, tuna and egg salads, cold cuts, turkey, roast and corned beef, cheese and vegetable platters, salads and fantastic homemade soups or one of the following:

  • Homemade Italian style pizzas
  • Fish tacos
  • Fish burgers
  • Selection of fajitas served with fresh salsas
  • Beef, chicken and vegetarian tostadas
  • Quesadillas
  • "La Paz" style hotdogs
  • Deli Style Sandwhiches
  • Gourmet grilled cheese sandwiches on homemade french bread

Great snacks are a great way to keep hungry divers happy! Our bakery and fruit baskets are kept full and there is always pop, juice, coffee, tea, filtered water and hot chocolate available. Our hostesses will be on the back deck to meet you after every dive with a big smile and a tray of goodies, drinks, and snacks. Afternoon snacks include a selection of the following; homemade cookies, brownies, sushi, cheese and cracker plates, chicken wings, assorted cakes, freshly baked muffins, banana bread, artichoke dip, ceviche, nachos, melted brie, ice cream, vegetable platters with dip and all sorts of other yummy stuff.


Dinners on the Nautilus Explorer will be served, plated, buffet or family style. There is a nice array of both Mexican and American style meals. Some of the delicious dishes include:
  • Street Taco Night
  • Roast Beed
  • Salmon Teryaki 
  • New York Grilled Steak
Each dinner is followed with that final touch, dessert! You can expect everything from chocolate cake, bread pudding and cheescake to flan, lemon basil pie and a strudel!
